Dough was made using the Richard Eaglespoon calculator on thin for a 14" pie and fermented in the fridge for 24 hrs, using Cairnspring Mills Glacier Peak flour, and baked on a baking steel for about 5 mins, then finished briefly under the broiler with the heat off.
